Bondi Liquor Co. Opens Its Brand-New Darlinghurst Distillery

Bondi Liquor Co. has opened its new Darlinghurst distillery, featuring onsite small-batch production and public tastings.
Bondi Liquor Co. has opened a new distillery in Darlinghurst, which began operations on 17 December 2025. The purpose-built facility is designed to function as a production and tasting hub, where all spirits are distilled onsite in small batches. The distillery also offers private tours and guided tastings, allowing visitors to see the production process and sample the full range.
Sustainability continues to shape Bondi Liquor Co.’s approach. The distillery uses grape-based ethanol, a by-product of the wine industry, and adopts bulk cocktail batching formats to reduce glass waste. It also uses low-emission bottles sourced through Saverglass.
The opening of the Darlinghurst distillery coincides with the unveiling of a new visual identity for the brand, described as a modern interpretation inspired by Bondi’s character, creativity and community.

Bondi Liquor Co. is based in Bondi but has expanded inland with this new urban location in Darlinghurst, continuing its focus on small-batch production and craft spirits including gin, vodka and cellos.
